Green tea and apple go surprisingly well together and this cake I whipped up blend them perfectly. It’s light and fluffy and not calorie dense at all, so people who are trying to lose weight can have this without feeling guilty. It is also nut + gluten free too! All the sweetness came from the apple so feel free to add a little honey and process it with the egg yolks.
Ingredients:
3 large eggs, separated
3 regular green tea bags
1 tablespoon butter, melted
1 apple
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Directions:
- Preheat oven to 350F or 180C
- Cut open the tea bags, pour contents in food processor and process the tea leaves until they’re a fine powder
- Wash and dice apple (you can peel if you want to, I just wasn’t bothered…)
- Add apple, butter, egg yolks, vanilla extract and salt into the food processor
- Beat egg whites until stiff peaks form
- Gently fold in the apple mixture into egg whites
- Pour batter into a greased 8-in pan
- Bake for 25 minutes
Makes a thin 11″ or thick 8.25″ cake
