This is the last pollock fillet in my freezer and this is probably the best pollock recipe I made, and it will probably work for any kind of fish that doesn’t have a strong distinct flavor. It is also very easy and full of healthy fats :)
I mashed the avocado with a fork and the texture was kind of like mashed potatoes so I just put that on the side, but if you process it with a food processor it would be a lot smoother and probably more liquidy and you can pour that on top of the fillet.
Ingredients:
1 pollock fillet (about 6oz)
1 teaspoon garlic powder
3 teaspoon extra virgin olive oil
Pinch of kosher salt and pepper
1/4 teaspoon dried basil
1/2 avocado
Directions:
- Preheat oven to 350F or 180C
- In a small bowl, mix salt, pepper, dried basil, half of the garlic powder and 1 teaspoon olive oil together. Rub that all over the pollock fillet
- Bake fillet for 8 to 10 minutes
- Mash/process avocado, the rest of the garlic powder, 2 teaspoon olive oil and some salt and pepper together
- Serve fillet with avocado
