Since I got up really late today (12:30 that is…) I just pulled together what’s in the fridge to make a quick dish.
Ingredients:
4 eggs
1 pollock fillet (about 6oz)
1/2 teaspoon curry powder
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin powder
Salt and pepper
Directions:
- Fry pollock on high heat until it’s almost completely cooked, break it up into pieces. Remove from frying pan and turn of the heat so the pan would cool down
- Whisk eggs with salt and pepper, turn stove back on to low heat
- Mix curry powder, paprika, cayenne pepper and cumin powder together, pour into the frying pan and stir until the spices dissolve into the oil
- Pour eggs into pan, when the edge starts to cook, push it into the middle
- Add pollock into eggs right before serving, give it a quick stir
