Spicy Pollock Scrambled Eggs

 Since I got up really late today (12:30 that is…) I just pulled together what’s in the fridge to make a quick dish.

Ingredients:
4 eggs
1 pollock fillet (about 6oz)
1/2 teaspoon curry powder
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin powder
Salt and pepper

Directions:

  1. Fry pollock on high heat until it’s almost completely cooked, break it up into pieces. Remove from frying pan and turn of the heat so the pan would cool down
  2. Whisk eggs with salt and pepper, turn stove back on to low heat
  3. Mix curry powder, paprika, cayenne pepper and cumin powder together, pour into the frying pan and stir until the spices dissolve into the oil
  4. Pour eggs into pan, when the edge starts to cook, push it into the middle
  5. Add pollock into eggs right before serving, give it a quick stir
