Microwave Single Serving Gluten-Free Chocolate Chip Cookie

This recipe was modified from this recipe of Zoom Yummy. It tastes just like a regular chocolate chip cookie but the texture is a little fluffy and cake-like, but still delicious and primal. I made the mistake of stirring the dough after adding the chocolate chips and they sunk to the bottom because the dough is pretty runny, I should have left them on the top before microwaving.

P.S. I used the 88% chocolate from Endangered Species – best dark chocolate but contains soy lecithin :(

Ingredients:
2 tablespoon butter or any kind of oil (I used EVOO)
1/2 tablespoon honey or agave
2-3 tablespoon beaten egg
1/2 teaspoon vanilla extract
1/8 teaspoon baking soda
6 tablespoon almond flour or almond meal
Pinch of salt
1/4 cup dark chocolate chip or dark chocolate broken up

Directions:

  1. Put butter/oil , honey and almond flour in a bowl. Microwave it for a few seconds to melt the butter
  2. Whisk everything in the bowl together. Spoon in 2 tablespoon of beaten egg, vanilla extract, salt and baking soda, whisk until completely mixed
  3. Add the chocolate chips
  4. Microwave for 2 minutes (mine was on 750W). Enjoy, you don’t need to share it with anyone :P
