Fried Pollock Topped with Orange Scrambled Egg

This dish is refreshing and light, I love it on a hot summer day for lunch.

Ingredients:
2 pollock fillets
1 egg, whisked
Zests of 1/2 orange
Juice of 1/2 lemon
2 tablespoon extra virgin olive oil
Salt and pepper to taste

Directions:

  1. Heat olive oil over high heat until hot, fry pollock fillets. Squeeze lemon juice and sprinkle salt and pepper when flipping the fillets over. When fillets are well done, remove from heat and put on a plate
  2. Turn off the heat and pour the egg in immediately, stir quickly
  3. Add orange zests right before serving, stir lightly. Do not overcook the egg
  4. Place egg on top of the fillets
