Fried Spicy Tuna & Bacon Meatballs

These tuna meatballs are tasty and easy to make – perfect for brunch :) I actually made five of them but two fell apart so I only shot three-_- I also sauteed some cabbage using the leftover oil after frying the meatballs, the cabbage soaked in all the flavors, yum.

Ingredients:
1 can tuna chunks
2 slices bacon
1 egg white
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
Black pepper to taste
(You don’t need salt, we have bacon!)

Directions:

  1. Start baking the bacon at 435F or 225C for 8 minutes
  2. Whisk egg white with paprika, cayenne pepper, garlic powder and black pepper
  3. Add in the tuna chunks and mix it thoroughly, break up the chunks if you need to
  4. When the bacon is done, break it up and mix into the tuna mixture
  5. Form the tuna into balls, make sure you pack them tightly so they won’t fall apart like some of mine
  6. Heat extra virgin olive oil over high heat, when it’s hot enough put the meatballs in. Fry until the surface is golden and crispy. Don’t worry about cooking it, the only raw thing is the egg white and it cooks easily. Enjoy.

Makes one serving of five to six 1″ balls

  2. Mine didn’t turn out very good. Too much paprika AND cayenne and I didn’t even use a whole teaspoon. They held together nicely and had a great texture but the flavor was a little strange. I will try again and use some different spices. I still love the method!
