Chicken and Dragon Fruit Salad

I made this salad as my post-binge damage control meal. Lots of proteins and packed of different flavors. I detest salads, I only eat salad when there’s some kind of fruit in there. This is definitely one of the best salads I’ve made.

This, my friends, is called a dragon fruit. Native to South America but very popular in Asia. To eat a dragon fruit, you slice it in half lengthwise and slice it into dices without cutting through the skin. Then turn the skin inside out, use a spoon to scoop all the little cubes out. It is mildly sweet, kind of bland if you like sweet fruits, tastes a little like melons.

Ingredients:
12 oz skin on chicken breast (that’s because I love the skin, skinless would be perfect too)
1 dragon fruit
1 pack salad greens
2 tablespoon red wine vinegar

Directions:

  1. Grill/bake the chicken breast the way you like. I stuffed some garlic and shallot under the skin and baked it
  2. Dice the dragon fruit and mix those with salad greens
  3. When the chicken is done cut it into small strips, mix into the salad
  4. Drizzle red wine vinegar on top
